½ tsp. olive oil
1 tbsp. sugar
2 ripe plums, halved and pitted
½ tsp. balsamic vinegar
2 tbsp. mascarpone cheese
1. Warm non-stick pan and add the olive oil, sprinkle sugar evenly.
2. After 30 seconds arrange the plums cut side down over the sugar and olive oil mixture. Simmer covered and checking every few minutes.
3. Cook until plums are softened. Pour the vinegar into the pan. Cook until the plums are lightly glazed and tender but not falling apart, turning the plums to coat on all sides.
4. Spoon the plums along with the syrup into a serving plate and add the dollop of mascarpone. Serve warm.
