Traditional Greek Salad

Serves 1


50g Feta cheese, cubed

Handful of iceberg lettuce

1 tomato, quartered

¼ cucumber (preferably use dark skinned cucumber, leaving the skin on)

3 to 5 large sized black olives, seeded

1 tbsp. chopped parsley


1 tsp. extra virgin olive oil

1 tsp. lemon juice

¼ tsp. crushed garlic

Pinch of sugar

Salt and freshly ground pepper


Lay all the prepared veggies on a bed of ice until ready to serve. They are best served cool and crisp.

To make the dressing whizz all the ingredients in a blender. Set aside.

Cut the feta cheese into cubes.

Put the lettuce, tomato and cucumber into a serving bowl. Scatter the feta on top of veggies. Top with chopped parsley OR basil.

Just before serving, add the dressing, scatter olives and serve immediately.
